Ingredients

• Zest of 2 citrus peels
• 1 cup citrus fruit juice
• 3/4 cup sugar
• Sparkling/seltzer water
• Half and half
• Ice

Directions

Fruit Syrup

1. Mix fruit juice, zest, and sugar in a small saucepan.
2. Bring to a boil, stirring occasionally to dissolve the sugar.
3. Remove from heat and let cool to room temperature.
4. Strain and chill in the fridge until ready to use.

Italian Soda

1. In a highball glass, add approximately 1/4 cup of fruit syrup.
2. Fill glass most of the way with ice and then sparkling water.
3. Top with a few splashes of half and half.
